Pizza For Lunch, Anyone?

Sometimes, I don’t know what to eat for lunch. Breakfast? No, problem. Dinner? Already bought the ingredients. Lunch? Aaaaah, damn. I look in the fridge, walk away, look again, walk away, check the internet, get lost on Facebook, go back to the fridge and before I know it, I really have to come up with something or I turn into a horrible angry girl. But yesterday I had a great idea; okay, maybe it is not a big invention, but I never made it before. A pizza, with tomato, avocado, basil and Iberico ham, BUT the pizza crust was not a real one made of dough, it was (drumroll…) a plain omelet. Wow! You would have never guessed!

It is a nice way to feel like you are eating something you shouldn’t, but then again it is healthy. This is one to remember for me, think of the things you can put on your “pizza” and how long it will keep you from another food dilemma, because the eggs will fill you up. Ooooh yes!

How to make it?

For one person you will need:

  • 2 eggs
  • 2 tomatoes
  • 1 tablespoon of chopped basil
  • 1/2 avocado
  • 2 slices of Iberico ham
  • Olive oil
  • Pepper
  1. Beat the eggs and pour the substance into a preheated pan with some olive oil, after two minutes flip the pizza in the pan and bake it two more minutes
  2. Chop up the tomatoes and avocado
  3. Put your pizza crust on a plate and garnish it with the tomatoes, avocado, basil, ham, drizzle some olive oil over it and if you like you could add some pepper
  4. Enjoy your lunch pizza!
